Cooking classes are available in Whistler and can be held in the comfort of your own home, at your rental apartment, or even at your business location. If you're located in the surrounding areas, we are happy to travel to you, and any additional travel costs can be discussed in advance.

Pricing
To make your choices easier, Chef Francesco offers a variety of pre-set menus or homemade dishes that reflect the Italian culinary tradition, all priced at 80 CAD per person.

Menu options

orecchiette & biscotti
We will dive into the heart of traditional Italian cuisine by preparing two iconic dishes: orecchiette, a beloved pasta shape from Puglia, and traditional Italian biscotti, the perfect sweet treat to pair with coffee or tea.
Together, we will learn how to handcraft orecchiette, mastering the unique technique of shaping this pasta with your hands to achieve its characteristic "little ear" shape. We will then prepare a delicious tomato sauce and basil pesto, to complement the pasta.
For dessert, we’ll make butter biscotti from scratch, exploring the perfect balance of flavors and textures to create crunchy, golden cookies.
At the end of the session, we will enjoy the fruits of our labor, savoring the orecchiette and biscotti while discussing the techniques and stories behind these traditional recipes.

carbonara & cassatelle
We will explore two dishes that epitomize the essence of Italian culinary tradition: the creamy carbonara from Rome and the delightful Sicilian cassatelle, a pastry filled with sweet ricotta, cinnamon and honey.
We’ll begin by mastering the art of carbonara, learning how to achieve the perfect creamy texture without cream, using eggs, Pecorino Romano, guanciale, and freshly cracked black pepper. Together, we’ll uncover the secrets to balancing the ingredients and perfecting this timeless Roman pasta dish.
For dessert, we’ll prepare cassatelle, a classic Sicilian treat. You’ll learn how to craft the delicate dough, prepare the creamy ricotta filling, and bake them to a golden, crispy perfection.
Once everything is ready, we’ll enjoy these two exceptional dishes, discussing their origins and techniques to ensure you can recreate them effortlessly at home.

Pizza & tiramisù
We will tackle two of the most famous preparations in the world, which represent traditional Italian cuisine at its finest: homemade pizza, made like real pizzaiolos, and the emblematic Italian dessert, tiramisu. Using top-quality ingredients, we will knead the pizza dough by hand, carefully understanding each step to achieve the perfect recipe.
We will prepare the various toppings together to your liking, starting with the simple Margherita to something more elaborate like pizza with pumpkin cream. I will offer other options as soon as we discuss this class. We will also learn how to make a perfect tiramisu, so you can impress your guests.
Finally, we’ll taste everything, enjoying the different flavors and tastes while clearing up any doubts.
